Power optimization after Android 9 update

Before the android 9 update on my S8, I used to be able to choose which apps would be automatically put to sleep after a few days, and others put to sleep always, and lastly apps that would never be put to sleep. I can't find these options any more. My main worry is that there are some apps I dont want optimized at all such as antivirus or VPN.

Settings - Device Care - Battery (bottom left icon) Three Dot Menu Top Right - Settings and everything is there 🐧

I dont see option for keeping an app awake always.

Well first off - "anti virus" apps are a waste of time on Android.... Yes - Really!
You can open Settings & at the top - click on Search & enter Optimize and you will see a list of apps that can be Toggled individually to be "optimized" or not - There's also a list of "Always Sleeping Apps" in the Battery settings previously mentioned 🐧
