I've updated my s9 plus and it shows in my notifications that the software update is connecting to server and wont go away....

It might be from your service provider. I had the same issue when I checked for update and there's no update, it would just "checking" for update but then just disappear without finding an update.

Go to Settings - Apps - Three Dot Menu Top Right - Show System Apps - Search for Software Updates - Storage - Clear Cache & Data for Software Updates - Reboot & Done 👍 🐧
p.s. It's not a "bug" - Something was just stuck in your device's cache 😉

Last resort - Factory Reset - Backup your device with Smart Switch etc before you Factory Reset.
