I don't know if anyone else had this happen? - It seems like after the last Security Patch update - Samsung Health was still recording Steps but there was nothing (information or data) in Trends - A Google Search and I found this:

This also fixed the issue for me - Thanks to Samsung EU 🇪🇺 🐧

hey @shaggyskunk one thing my son taught me which fixes alot of issues is to clear your cache and wipe your data for the app. give that a shot for Samsung health and then maybe a soft reset and see if trends start coming back?

What did work was the solution that I found on the EU Samsung Community... Does this mean that the people in the EU are healthier? lol 😂 🐧
