I think you can change the style under settings → Lock screen and security → Always on display. Click on Digital Clock and on the botton left corner, you can change the clock stlye too.2982098a-3c75-4462-8e8b-89a577d9196e.jpg

Not much in terms of options unless you used the always on display and had a custom theme. Unfortunately there isn't any setting to change.

the only way you can change it is by applying a theme which has a different clock interface

This is a common complaint so hopefully Samsung will see the suggestions and offer alternative clock styles in a future update.
As @emperor said, some themes offer a different clock.

Yes on s8 there is aod screen lock screen and home screen..clock can't be changed in lock screen. more of these suggestions posts should change that in a future update!

It is awfull and the only way to change it is to "buy" a theme.... After paying an hefty price for the phone... !!!!!

Even by changing for a theme with another clock look, it goes back to the stacked clock...

If you have any notification on the lock screen, the clock will read properly. I put in an app which gives a notification even when locked. Look for ACR Automatic Call Recorder. it works on my Tablet and my phone to keep the clock looking normal. (both run Nougat)
