I have just saw A06 and A07 got the one ui 8 update. When will Galaxy A15 and A16 get the new update ?

My a16 5g got it recently,wouldn't be surprised the A16 is already getting it in some regions.

I am guessing all the 5g models are going to get the updates first, then 4g

Maybe,maybe not, it might just be a region thing too. Have you checked for updates in the settings today?
