To add-- have you set your screen recorder to capture in 1080p? Make sure you have - you may be recording at a lower resolution than you want. You can do this by going to your Quick panel, tapping on Screen recorder, and setting your video quality to High (1080p).

I think it may be due to personal preference - the stock screen recorder app still compresses the video to a certain extent even at 1080p, leading to less-than-ideal video quality at times.
I suggest trying other apps that provide lossless screen recording through the Galaxy Store or Google Play Store, and find one that works for you.
