Has anyone else experienced that when updating their A35 5G to One UI 8 it restarts out of nowhere? Because it happened to me twice already since I updated.

I have no idea. I don't have the update yet with the A56 5g, so if it's already arrived, maybe it has bugs and a patch will come out to fix them.
