I have notice on one of my apps that when I click on the 3 bullets my box comes up dark Grey and not white. It's very hard to read black lettering in a dark Grey box.  Not sure if it is from the update or not. Any idea how to change the color?

Which app? Many apps have a dark mode option, which can be turned on or off in the app's settings. 

It's also possible that you may have enabled dark mode throughout the system, you can check in settings > display. 

Depending on the app in question, it's possible the change is due to the update, but it's not an error.

I'm not familiar with this app, but is there a "settings" for it, normally it would be found in the 3 dot menu, but it could also be somewhere else.

Also it is not throughout the system. I checked that out as well.
