Yes, Android 15 aka One UI V7.0 will be available in Canada, and not just for the S24 series, but several other Samsung devices.

Specific dates have not yet been confirmed. 

S24 series is expected to possibly receive One UI V7.0 in January.. S23 series after that etc.

NOTE that the S25 series is also expected to be released towards the end of January, early February and will ship with One UI V7.0

While there's no official confirmation yet, it's highly likely that the Galaxy S24 Ultra will receive the Android 15 update. Samsung has a strong track record of providing timely software updates for its flagship devices.
