Galaxy SIt sounds like an issue with recently installed apps, or a change in some settings.
What I would do is:
- Boot into Recovery & Wipe Cache.
- Use Device Care to see if there's any misbehaving apps & put them to sleep.
- Temporarily disable or Uninstall any recently installed apps & see if the issue is resolved?
I think that it's unlikely to be a Hardware or Software (Samsung's One UI) issue.
You could Boot into Safe Mode, as that will disable any 3rd party apps, but it won't tell you which app(s) may be causing the problem.

Galaxy S- Press and hold thePower button andVolume down button (right edge) until the 'Power off' prompt appears on the screen then release.
- Touch and holdPower off until the 'Safe mode' prompt appears then release.
- To confirm, tapSafe mode .The process may take up to 30 seconds to complete.Upon reboot, 'Safe mode' appears in the lower-left of the unlock / Home screen.
- With Safe Mode enabled, ensure Airplane Mode is turned off then test device and app functionality.To exit Safe Mode, simply Reboot.

Galaxy SYou could Uninstall Sound Assistant & download the previous version from apk mirror, but I doubt that it is the issue.

Galaxy SImma tell you this, batter gotten a lot better when i uninstalled it. You actually notice with new version of sound assistant, whenever i click volume there is two volume sliders that are showing. The other one is the media volume, while the other is a specific app volume that is somehow there for no reason even i am not using the app. Unlike the old sound assistant, even you press the 3 dots in volume slider, no apps that is not running in the background will be displayed there.

Galaxy SThe media one and a random app that is in there for no reason.
And idk how to even only have 1 volume slider.
Idk how to change it. But for now I won't download back the soundassiatant for now. To see how battery will change
