Galaxy SWhich email app are you using?
Are you using any Themes?
Gmail Unread is white text & turns grey after being read.
You can try going to Settings > Apps Search for email app you are using & Click on it & Scroll down to Storage & Clear Both Cache & Data for the app. Reboot.
You won't lose your emails, they will be repopulated by the servers.

Galaxy SHi Tlew, two other simple fixes include clearing the Email app cache (or data) and signing out and signing in again. Could you let us know if it still does not work?
