Samsung s10's need iris scanner so we can unlock the phone with masks on!!!!

They can't add it. The hardware is already out without the iris scanners, and it's not a software feature.

As mentioned by@CHMultimedia, the iris function is not available in S10 phones and it is not a software option. The S10 has Ultrasonic Fingerprint Sensor and Face Recognition under biometric security option.

You can "add alternative look" to make it work with masks on.

I just tried it but with the mask on it says no face recognize. Could you please explain to me how you would do it? Thank you!

This is one of the reasons I don't think I'll be upgrading from my note 9 anytime soon

Tbh I never used it before with a mask, I just assumed that it would work.
