Have you checked that you didn't accidently enable dark mode?

Check if you have enabled bed time mode or options in power saving.

It sounds like bed time mode might be enabled on your Galaxy S24 Ultra. Go to: Settings → Modes and Routines Check if Bedtime mode is ON (this can make the screen black and white). If enabled, turn it OFF or adjust the settings.

Restart your phone. Sometimes, a simple restart fixes display issues.
