My S24 Ultra force process the Image when using the 50MP and 200MP Camera.
I've tried:
Regular and Pro Mode
Turning off Supet HDR in Gallery
Turning off Scene Optimizer in Camera Settings
Turning off Auto HDR in Camera Assistant
Turning off Adaptive Pixel

All to no avail. The resulting image comes out way over exposed and completely destroys the quality of the photo. Is anyone else having this issue?

Try Expert Raw mode and in settings for that set picture saving in raw format. That should eliminate most, if not all, processing be the camera app.

That also is not working. Even the RAW photo taken from Expert Raw is Post Processed.

It saves an unprocessed DNG file. There may be an embedded preview, but the raw data is there. From Samsung's website:

Unlike JPEG, which compresses photos to save file size, RAW files retain the original uncompressed image data from the camera sensor...

This is using the Expert Raw app/plugin from the Galaxy store.
