As near as I can tell the S8 Plus has the same charger as my Note 4. Both have output of 9V, 1.67 A or 5V, 2A. This appears to be Quick Charge 2.0 without the 12V step. Certainly doesn't look like the 3.2V - 20V dynamic spec of Quick Charge 3.0
In a chat the Samsung rep said it is 3.0 but that doesn't add up at all. Qualcomm website shows S8 as 2.0. So it sure looks to me like it is 2 0
So is it Quick Charge 2.0? Will a proper Quick Charge 2.0 work properly on this Adaptive Fast Charge? Can I safely put a 3.0 charger on it and will it charge properly if I do?

I've been using Quick Charge 3 chargers on my Note 4, S7 Edge, etc. They're safe to use as the devices won't overcharge.

I only use the supplied charger and I never run into any issues.

I have multiple charger, original one, one original from Samsung that goes to 12v, multiple quick charge 2 and 3 and no issues at all with charging, it's QC2.0 not 3.0

Thanks Map. That is interesting because you say your Samsung charger goes to 12V. I have the original charger that came with the S8 Plus, and I also the latest Samsung wireless charger with Fast Charger. Both chargers are the same part number, and the stencilling on it says output is 9V, 1.67 A or 5V, 2A ... neither says anything about 12V. Those two chargers are exactly the same output as labelled on my old Note 4 Adaptive Fast Charger even though it is a slightly different part number
So maybe a 100% QC2.0 charger might actually outperform the Samsung charger if my phone accepts the 12V part of the charging cycle. It will be interesting to test.

Update ....
Even though the Samsung Canada rep told me on the phone that it is Quick Charge 3.0, I have confirmed from two sources that it is the same Quick Charge 2.0 from previous devices.
Samsung USA Community:
https://us.community.samsung.com/t5/Galaxy-S8-Questions-and-Answers/USA-Variant-S8-QuickCharge-4-0/td-p/91023
Qualcomm has a huge list of which devices use which version of Quick Charge, and which chargers are certified Quick Charge:
https://www.qualcomm.com/products/features/quick-charge
(download the full list on pdf where it says "Full List of Quick Charge Devices, Accessories, and Power Controllers")
I find this very useful information because it helps me to buy a third party charger. I also find it illuminating how hard it was to find out a simple spec, and how I was mis-informed when I chatted with a Samsung rep. Pretty disappointed.

I wonder why they never chose to go to the latest version of Quick Charge

Did you try with Qualcomm 3.0 charger? What's the latest update? I'm very happy with the current fast charging speed on my S8 PLUS with stock charger, but won't hurt to get a faster one
