Does anyone know when the new software update UI 6.0 is coming out for S21 in Canada?

S23 series, possibly the end of October, early November..

S22 series, maybe mid November.

S21 series, maybe December.

Other than the S23 series, rough guesses. Depends on how Beta testing goes, and even the S23 series may not be finished with it's Betas.

Why is Wikipedia saying something different?

Wikipedia is confused. 

Android is Google's OS, and they JUST released Android 14 today.

While Samsung's One UI V6.0 is BASED on Android 14, it is not the same OS in it's entirety.

Samsung modifies, or "skins" Android for Samsung phones. 

I mean, if you don't believe me, and have an S23, you can check for updates until your fingers bleed, but it ain't going to be today, or tomorrow, or the next day.

Rather than rely on information from Wikipedia (not known for their Tech acumen), and check on Sammobile, or SammyFans.

But hey, I'd be happy to be wrong.

That's why Wikipedia is always open for edits, because sometimes the info can be wrong or outdated, to an extent.

Hopefully, but could be early November as well.. or it could be delayed for some reason. One UI version updates have been delayed in the past, but I'm pretty sure that Samsung is working as hard as they can on it.

Just be patient!

Be happy things are mad stable as it is. Give Samsung programming engineers rime to properly code. Test and test update delivery successful update. I'd rather this and having to deal with riddled bugs and 3 updates in less than 32 days like the iPhone 15 Pro/PeoMax is already having to deal with.
