Just wondering how trade-ins work. Do we receive the new device then send in the old one and receive a credit?

WRONG MOVE. Never, I repeat: NEVER do trade-in with Scamsung. Read all the horrible experiences in this forum. Also their value is lower to almost nothing compared to you selling it yourself privately (marketplace or Kijiji).
