Galaxy SCheck if there are any updates in either PlayStore,
Or in Google Play Services?
Settings, About, Software select Google or similar therein (sry i forgot the actual listing but it's there) and update.
You may need to update twice as I think i had to in order to get the Google Play Services Feb update on my S23 (non Plus/Ultra).
Also see if there is an overall software or security patches pending for you Galaxy S 23 Ultra (S23U)

Galaxy SIf still an issue i think you can clear the YouTube App Cache but I'm uncertain.
@RedDogRabbit may be on vacation or just seeing if we can level up to help his expert help for others and leave him the truly challenging or interesting stuff (maybe I'm guessing /s I kid)

Check Video Quality Settings in YouTube. Even if you're not manually choosing 2K or 4K, YouTube may automatically adjust the quality to the highest resolution available.
Open the YouTube app. Play a video and tap the Settings (gear) icon.
Choose Quality and set it to a lower resolution, such as 480p or 720p, to reduce battery usage.
Restrict Background Activity for YouTube. The YouTube app might be running unnecessary background processes.
Go to Settings > Apps > YouTube > Battery. Select Restricted or disable background activity for YouTube to prevent it from using resources when not in use.
