Hmmp, no announcement yet from samsung. There is even speculation that there might be another beta 4 release. Most likely that feb 7 refers to S25 delivery date which is in one ui7.

Galaxy S25 will be released on February 7, samsung already announced that One UI 7 will be released alongside the new device

I am talking about the update for us S24 Ultra owners. That's where the article said that Samsung will only start rollout for the S24U "by the end of the first quarter". 😭
