Just curious, why Samsung OS update, OTA, relies on service providers, or at least in my case FIDO, typically, we have to  wait for Fido to push the update whenever they feel like.

Unlike iOS, it comes directly from Apple, which in my opinion, is true OTA

Open source vs closed. It's as simple as that.

So in the sense of android carries can add to it if they like. Apple they can't

Open/Closed source has nothing to do with this (and if you doubt it, see how Google releases their updates simultaneously globally). It's just a remanent from the 2G/3G era for the most part.

This is how open source work as I understand (Credits to CHMultimedia)

- Update created from Samsung

- Carriers submitted what they need to change to Samsung

- Once everything set, Samsung push the update out all at the same time

- Since updates have divided into couples carriers, the updates will base on CSC to deliver to our phones

- If update has delay on some Carriers, could be some incompatibility issue need to fix or on hold the update by Samsung

Open source refers to the availability and distribution of the source code, not the update process actually
