Like jamsey said, you can do:

- Press Vol down and Bixby key once at the same time. (Not long hold)


Also, more alternative ways:
- Use palm swipe gesture
Open Settings → Advanced features → Motion and gestures ( Enable Palm swipe to capture )

- Ask Bixby (Hi Bixby, take a screenshot)
