Samsung WearOS dialer app "phone" always uses watch speaker/mic instead of bluetooth

I have a Watch4 40mm.  The Samsung dialer-app "Phone Version 12.7.00.24" does not respect my bluetooth settings to use my headset.  I have multipoint-paired my headset to my phone and watch, but it always uses the speaker/mic on the watch.  Youtube Music app on the watch does not do this.

Is there any workaround?  Recommendation for alternate dialers?  I cannot install the WearOS standard "Phone By Google" app as it's not listed as compatible in the Play Store.  In fact there are no phones or dialers listed as compatible on the Play Store.  I can't even report a bug to Samsung because their bug reporting tool is blocked away from me.

When I contacted tech support they wanted me to factory reset my watch.  I got this a week ago, don't be a **bleep**.

At this point I'm tempted to see what happens if I sideload in the Google dialer.  Or return the darned thing -- it's not that this is a dealbreaker issue, it's that it's revealed how bad Samsung's ecosystem is here.  Bad support, incomplete compatibility with Google WearOS, etc.

Are you using Samsung's Sound Assistant? 

In the app, under "Advanced Settings", you can select Alerts through Headphones. Works for my Bluetooth Earbuds.
