I am quite disappointed as I find no option for manual aperture (f-number) changes on my new Galaxy s20.

That is really the only "pro" option I would want to work with.... and not hundreds of filters and AI-options and bunny-stickers.

Is there a workaround? A different camera app?

Or do I have to go back to my 5 year old Huawei phone that had this option?

Earlier models ie Note 10 does has aperture control, albeit two steps only, switching between f1.5 and f2.4.
Newer models comes with fixed apertures for all lenses thus there's no option for aperture control in pro mode. It's proved to be challenging to use real aperture ring in a smartphone. It will be too big and also will impact thickness of the phones significantly, if installed. So Samsung goes the other direction ( same with other manufacturers ) to bet on TOF ( time of flight ) technology to create a shallow depth of field. Same effect but with different technique.
