Is there anyway to turn off dark mode with the newest beta update? Mine is stuck and while i domt mind it I'd like to know if it is possible to turn off

I believe you have to turn off power saving mode

if you have developer options on, you could have it marked to "force dark mode always on".

Please check whether you have power saving mode on, as it automatically triggers the Dark Mode.
