Does anybody know why I would not be able to use NFC now that I have the beta version software on my phone?

As installing Beta Software make the device Not certified for Play Protect Certification, you can see if you go to google play store and go to settings at very bottom, you'll see marked as not certified. Some apps including Google pay won't work as also said in Beta Notice. It'll work after final official update, or if you wish you can also use Samsung Pay as it is working fine even in beta.

NFC itself will still work as Beam still seems to, it's just the certification for Google for the Pay service.
