I do not see the option for "caller ID and spam protection" in call settings? 

This is the built in spam blocker from hiya. Is it not available on beta? Or did Sprint remove it?

I see it on my s10, but I purchased it unlocked (& use Verizon).

Unfortunately Sprint removes that feature.... They want to charge us that monthly fee for their crappy spam call protection.
