I recently updated my phone's software into UI 3.1 and of course, a lot of changes have happened. Now, when I opened my music player, I noticed that my recorded voices are there and I cannot find a way to exclude them or remove them on my player unless I will delete them. Is there any way to exclude them without actually deleting the files?

Apparently, voice record is now classied as music. You can hide the voice recorder folder from the Samsung music app so it would not show your recordings. Go to the Folders tab > tap the three dots on the upper right > select hide folders > select voice recorder folder then apply.
