How "Speed" in Pro Mode works

I've only recently understood how the speed setting works in Pro Mode. Basically, lowering it lets you capture moving objects and people with much less blur, in exchange of lower light. If ISO is set to Auto, it will automatically adjust based on the current lighting and speed setting. Higher ISO will lead to grainier photos but at least it tried to brighten your photos & videos lol.

Anyway, I've been looking for a way to capture photos while the subjects are moving. I'm not a fan of asking people to stay put for me to take their photos. I like to capture moments when they're not pressured looking at a camera. So, this is some nice knowledge. 
(and a little bit of saving point so I don't feel too compelled to sell this phone)

Frankly, I've tried to do some googling before about how the Pro features worked. The explanations weren't very clear and I probably didn't really do enough research. All these time, it was a simple as "lower speed for moving subject, higher for static, dark places". Maybe it's more than that, but I guess that's a basic understanding of it.

Here's one thing, I don't understand why the ISO can reach as low as 12 and as high as 8000 when it's set to Auto mode. I can only set it manually from 50-3200. I think it only does it on Pro Video mode though.
