Galaxy S1: Open the “Apps” or “Applications menu” from your Settings menu. Step 2: Tap the app whose icon you would like to be able to see again. Step 3: If you see a button that says “Enable/Start”, this is likely to be the source of your problem. tap “Enable/Start” to get your icons back again.

Galaxy SI have exactly the same issue but on my Tablet A7 Lite. This is right after upgrading to One UI 6.0. And all solutions in this thread is not working because the Samsung Gallery app is an stock app which could not be dis/enabled or un-install/re-install.
Furthermore, this issue is clearly not resolved, so why is this thread flagged as resolved?

Galaxy SI had the same problem, after update dissapearing Samdung gallery app icon shortcut but still had software installed. Simple solution in YT link below. But Goto PLaystore an search gallery. The one you ant to instal is GALLERY LLC. This is the Samsung gallery. Hope this solves the issue for you

Galaxy SKinda late to the party but i had the same problem and wasnt able to find any solution to it online other than download another gallery app or just reset the phone entirely. Just like you my gallery app was missing from the app drawer but i could access it if i went to the galaxy store and clicked open there or open the app in the settings.
While trying to troubleshoot it myself i learned that by installing another home launcher (like Nova launcher) the Gallery app would show up just fine, so the problem was the One UI all long , went into settings, apps , One UI , deleted all the cached and stored data and gave the phone a restart.
Doing so did fix the gallery app problem but as expected every customisation depended on One UI was reseted to the default. If u had previously deleted the random Samsung bloatware your phone came with (at least for me) will come back as grey icons , which u have to download and delete to get rid of , a better trade than having to backup everything , reset ur phone and restore everything back( which could resort into the same problem if you backup ur app data via smartswitch and restore it but not entirely sure bcuz i didnt go that route).
Went in full details just in case smth similar but not quite the same happens to someone so they could have a staging ground before having to brainstorm solutions into existance as I had to.
But yeah in short : Settings> Apps>One Ui Home>Storage>Clear Data and Cache. And then restart, Your homescreen should be back at your factory settings with the Gallery app back in the drawer.
NOTE:CUSTOMISATIONS DEPENDED ON ONE UI WILL RESET. (You might have to download and delete the Samsung bloatware if grey icons show up in your app drawer) .

Galaxy SI had the same problem.
I went setting>Start screen and checked if it was diabled to show on screen. It was not. I disabled it an abled it again. Then restartet my phone.
Then i found it by scrolling through each page of my apps in my home/Startscreen. Then i pulled it to where it belongs.
