When using the back button to exit messaging apps like texts and Facebook Messenger, the swipe gestures are really sensitive and add either a "period" or "z" to the next message creating a "draft" message when swiping up from either side.  This makes it hard to exit the app the correct way.  Is there a setting adjustment I'm missing?  Example if I'm texting & swipe up to dismiss the app when I return I have a "draft" with the keyboard buttons located above the gesture.

This is the only setting and it's for the back button only unfortunately. I absolutely agree and made a post about it earlier where there needs to be a safe zone for swiping gestures. Sometimes I can be on a website and the page will scroll while going home or into multitasking and create a little lag. If you're using the Samsung keyboard, I simply moved it up so there's a noticeable gap when I text. It actually feels more comfortable to text a little higher than having it all the way at the bottom. my texting accuracy has definitely increased and I'm no longer having these gestures get in the way. The only downside is that third party keyboards don't support moving the keyboard up. Not sure if its possible on gboard as I'm using the Google Keyboard from 2016. Another solution would be to hide the keyboard when you are done texting and want to use a gesture, it's a setting in the previous menu.

I also created a post about this. It seems to only be a problem with Gboard, not sure if it's a beta issue or a Gboard issue however it wasn't a problem before beta.

If you switch to Samsung keyboard and gesture back or home you'll notice the keyboard is dropped down before swiping out where Gboard stays up and causes you to type out words.

I tend to have problems when using the back swipe gestures when I'm in landscape mode watching videos I shouldn't have to fight with it just to get it to work most of the times it won't so I have to hope that at least I can use the home function and do it that way these new gestures are complete garbage I don't see why we need to implement iPhone esque like features on a Android phone if I wanted a iPhone features I would purchase an iPhone leave the Android functions two Android phones and leave iPhone features to iPhones it's these things that separate the two types of operating systems
