Not sure about the Headline/Body Font, but Accent Color is to change the color of the interface icons shown in blue in the attached screenshot, and the Icon Shape is to change the app icons shapes. Accent color doesn't seem to currently work, and Icon Shape works on some apps but not all yet. It's probably still being implemented since we're in beta.
