Galaxy Athey are the same thing, moving to eSIM doesn't mean it will give you more battery life, signal coverage also the same just like physical SIM
eSIM is great if you like abroad a lot such as to Australia or Thailand, you can buy online local eSIM of your country desitination even before your departure to avoid roaming cost
the other advantage is that you can store more than two eSIM profile (only two of them can activate at the same time though), physical SIM can only store maximum of two SIM
personally i still use physical SIM because i don't have plan visiting other country yet, but sure you can buy it for better security because a thief can't hijack an eSIM
