I love the new subtle animation when you go to the home screen from an app. It looks smooth and polished.
I've also enabled the adaptive battery protection feature, which I've anticipated the most ever since I heard the One6.1 announcement!
Oh, and I like that I can finally add widgets, both in the lockscreen and AOD. I've put battery indicators so I can see my earphones and smartwatch's battery. And I've also put the weather alongside it so it's balanced.
Overall, I really love the new update, small refinements, and a bunch of useful new features. I'm looking forward to OneUI 7 once it's released!
