How do I ensure that my existing phone plan doesn’t use data when travelling. I plan to use an eSIM when overseas.

keep hearing that people have returned home to a large bill!

You'll need to check with your provider to see what plan you're on and turn off roaming on your app if you've got it installed on your phone! Ask your provider these questions when you go and see them otherwise write a list of what you want to ask them then make the appointment with them if applicable.

I know that Optus offer a $5 a day roaming option to its customers but Vodafone customers just simply take their plans with them including all data phone calls & texts for $5 a day! Do your research & check your options before you go! That way you'll know what you're up for or know what to expect once you're overseas there! 😊

A number of people have been caught because they didn't turn off automatic updates (or possibly limit to wi-fi) thus using lots of data in a foreign country (or plane coming in to land).

I have an eSIM & SIM ( Vodafone + Woolworths) in my Samsung Fold 5.
I recently went to Asia. My Vodafone automaticly went into international roaming at $5 per day. I checked with Vodafone before I went & asked a list of questions like suggested by kbau. I turn off my Woolworths SIM in the Samsung phone Settings. If you go Settings, Connections, SIM Manager- you then have SIM 1 with telco providers name + eSIM1 with telco providers name. You can turn each SIM on and off this way. Alternatively you can remove your SIM card from the mobile while overseas & put back into mobile on return to Australia. Both ways have worked for me. Each telco has different international roaming options & plans so best to seek information from your telco provider. My partner is with Optus post paid & last year he need to go into his Optus app on the mobile for international roaming to occur. This year his international roaming worked automatically when we landed overseas. Seems like telco policys also change year to year. My suggestion is to make the most of free wifi & turn off automatic updates. Have a great trip.

Yup, flOptus decided that they would remove the ability for customers to manage roaming, and instead, as you noted, it activates as soon as you land, unless the sim is removed or disabled.
