You can have only 1 physical Sim and 3 esims max altogether.

A variant on this
1. On my S23 FE I can have somewhere around 5-7 esim profiles registered BUT only one active at a time. (Plus my standard sim slot)
2. Nowadays you can get a specialised "sim" card which converts the sim card slot to a multiple esim function, again only one active at a time.
Essentially converts your single sim slot phone to an esim phone. Presumably when you remove the "sim" card it reverts to a standard single sim phone.
There is also a service where your sign up allows you to switch from one esim account to another as you move from country to country but they manage your plans, data, etc. at their end.
Sadly Boost has been promising supporting esim functionality on phones with esim capability FOREVER AND EVER. Boost is owned by Telstra who has provided introductory and then full esim functionality since 2017. HEY Telstra and Boost ARE YOU READING THIS? SHAME ON YOU.

That's almost certainly the case here. Different setup in different markets. From the gsmarena website "Nano-SIM and eSIM or Dual SIM (2 Nano-SIMs and eSIM, dual stand-by)". Australia tends to be supplied with the more basic specs.

My phone looks like dual but is single sim and esim. Go to Connections, Mobile Network and see if it allows you to add an esim.
