Register for beta

Where exactly can I find to register for beta updates? I tried notices, etc. I can't find anywhere

You can't. Only a few countries are in the scheme. Go to Community page, top right and search for beta program, somewhere in there you will find more details.

Just to add, the beta program hasn't started yet anyway.

And to rub salt in the wound, the S25 series will be the first to have One UI 7, when they launch next year.
Other devices will receive it after that.
