I watched youtube how to do it but when i uninstalled all updates, the version become 5.0.01.6, how to make it 6.0.11.1?

You can't from Google or Samsung store. If you goto https://www.apkmirror.com/ you can side load any version they have archived.
You need to enable installing 'untrusted sources ' .
