I think I understand now. I'm also on OneUI 6.1 but on S24 Ultra. Probably this feature is no longer available. I also checked other apps I have and no option to uninstall updates.
ah this version is for OneUI 6.1 that came with S24 series so there's no other "factory version" for it to go back to if you're on S24 series. what you can do for now is wait for the next update if Samsung would decide to redesign the app.
