I don't think you're missing out on a lot. It's mainly just the AI features.

Wished the Now Brief could do a lot more but it feels more like a gimmick instead of a useful function.

Now Brief exclusive to S25 Series, Fold6/Flip6/S24/S23 or older series won't get Now Brief

i am pretty sure Fold7/Flip7 will get Now Brief, however everyone can have Now Bar, i agree i don't need Now Brief, but Now Bar will somehow useful for some people.

some features i want from One UI 7 is that new battery icon, Android Identity Check which added biometrics on top pin code/pattern/password when changing sensitive data outside safe place, ability to completely turn off 2G connection, and Home Up DIY

When it was my graduation, i saw someone having an s24 ultra with the one ui 7. I was utterly shocked because i hadn't seen any s24 ultras with this update yet. And yes i am from the Philippines.
