I'm not seeing dark mode on apps like Google Now, Calendar Widget, Play Music, Gmail and I'm sure many more to come! If my Dark mode is active it was my understanding all if not most apps should respond accordingly. How do you fix this?

play music is going to be replaced by YouTube music soon so I wouldn't expect one there. Gmail I don't have either but apparently it's rolling out to people now so it should be just a matter of time. Google now is I think considered the Google assistant or something along those lines but that as well is apparently coming anytime now. I don't have that yet either but when you turn on dark and those become available they will automatically switch to dark mode

Go into developer settings and turn on force dark mode. You will get dark mode in almost every app in many case expect for Google ones

QuestionsEach app has to have a dark mode support to work with systemwide dark mode. While not a fix, a work around would be to force dark mode as suggested by Zmantech
