hold an app an release it above the other app you want to create a folder with, automatically it'll create a folder, then you add the others

You can also long press an app in the app list. It will give you an option to multi-select items which can then be send to the home screen or a folder. This is less work sometimes. I used it to put social or travel apps in a folder quickly.
