By any chance, did you set up "Auto factory reset" on your Secure lock settings before the factory reset?
This option ensures that after 20 incorrect attempts to unlock your device, it will reset to factory settings - wiping all of your files and downloaded apps, including gallery photos.
If you or someone else tried to unsuccessfully unlock your device for 20 consecutive attempts, then the automation must have triggered.
Alternatively, the sudden factory reset could have been... a random thing. It's a problem that has been present with Android devices as far back as 2015 -- a quick google search would reveal thousands of other Android users, not just Samsung owners, having the same problem. It's rare, but unfortunately, does happen.
You can try logging into your Samsung account and run "restore data" from Settings > Accounts and backup. This will restore any backed up data on Samsung Cloud that you may have synced in the past.
As for your photos, if you have the Google Photos app installed (and assuming you had sync on), your photos should be available on photos.google.com.
