Wear OS 3.5 & One UI Watch 4.5 update rolling out now for the Watch4 Classic LTE.
Possibly for the Watch4 LTE as well?

Edit: For all Watch4 series.
Edit 2: To access the qwerty keyboard, please change the keyboard settings to "qwerty" in the wearables app or on the watch.

Solution
Wearables
Open the Wearables app.
Go to Watch Settings -> General -> Samsung Keyboard -> Input Langauges.

Here, tap on the language (such as English) and change it from 3 x 4 to Qwerty.

Hope that helps.
It may take a minute for the change to be reflected on the watch. Screenshot_20220906-185945_Galaxy Watch5 Manager.png

@J-bird It is there, but you'll need to go into the Wearables app and change your keyboard settings to QWERTY before it will show in the watch. 20220906_183857_5607_1662453568.jpg

I'm so lost with this, all that keeps coming up is the old school dumb keyboard, all I can figure out is Gboard, if you can tell me exactly what to do this would be awesome?

Thank you all good, should I uninstall Gboard?

You can, but leave it for now and see if you're happy with the Samsung Keyboard first.

I use and am happy with Samsung Keyboard, and others like Gboard.

Glad you got it sorted πŸ‘
