The OG Note series had this app called S-Note. It is my favorite app and actually it is still what I'm using now even with Note20U
The thing is, Samsung has replaced the S-Note app with Samsung Note app. There is just sooo much difference! I tried using the Samsung Note app but it is not just how I want my notebooks to be stored/viewed as I wanted!
I have been commenting, sending emails I think to Samsung sites to pls bring back the S-Note app as a default app with regular app updates
I just don't get why they wouldn't do it.
It has been bothering me for years.

It is a BIG improvement over the S-Note app by a mile. This is where I do my lists most of the time since I can do them without turning the phone screen on.
What is it that you want the app to have/do? Maybe the members here can help you.
+1 on what our fellow community member @Magnaguard said. Samsung Notes is one of the most loved default apps of Galaxy fans. However, I understand we all have preferences. You can ask this community for suggestions if you're looking for something in particular, or you can send an email to rnd.hr@samsung.com if you have a proposal in terms of some S-Note functionalities to be applied to the new default noting app.
