I've noticed something only happened since using my s24 Plus.
In Google contacts you can put custom labels on emails and phone numbers. I have custom labels on everything. So for example someone might have a label for their business number and their mum's number and their partner's number
Lately I have noticed that many of these custom labels have been changed to "work"
They also can't be changed back either on the phone or using the web. It will stay for a short while before getting changed to work again.
Your contacts may be stored in several places like sim card (being turned off by Samsung), the phone itselg or gmail/google. You are changing in one list but the this list is not syncing to your main list. I think the way to check is to open phone dialer, click and hold to open to setting which shows which list. If this doesn't show google something like "samsung show phone list". Actually I have just looked, go to the contact folder, click on the name, find "more" at bottom. Scroll to bottom for "Storage and it will show where.
