This is my 2nd full day of use on my new S25 Ultra. Why would I be down to 66 percent with only 2 hours screen on time? I was expecting more battery performance from this phone

It will take from a week to at least 2 week before a new battery get linear because being a new device in the first 2 weeks the device have a leraning curve and app updates and copying from backups or importing and syncing. I will suggest you to use your phone as you always do without care about the battery ,charge it when it needs and do top up through the day if you really need peace of mind. But is like new cars it take a few hundred / a thousand of km from new before get the top performance . Plus always on and hundreds of notification will just eat battery continuously because is like you always scroll down the page and update the result it will keep the phone continuously at work and so it will constantly eat battery non stop.

I have S25 Ultra 512GB.

I am facing the same things. It's been 2 week and I had 3 main issues.
1) Phone is heating without chanrging but with lite usage.
2) Phone is heating while charging without any usage.
3) Battery is draining quickly without any heavy usage.
4) out of 12GB, only 5 GB is available in which 1.1GB is reserved without any usage. Almost 5.5GB is used continuously by what?
