Can I please put in a request to have an option to go back to the old layout? Having to scroll down for all my apps instead of being able to click on a button to bring me to the correct approximate page for the app is slowly doing my head in. Also, there is now an awkwardly large gap on my home screen up the top before any of my apps. I'm not saying everyone has to go back to the old layout but could there be some option to customise the phone layout?

I second this, I had mine set up perfect and they screwed it in this way

To go back to the page style app layout:
1. Go to the app layout
2. Click on the 3 dots at the lower right screen
3. Click on Sort
4. Choose Custom order.

Yes, I actually prefer my Apps arranged on App screens arranged horizontally rather than the alphabetical vertical mode.

Thank you so much! I ended up using Good Lock to customise my home screen a little more as well and managed to change the pull down notification settings. It feels much more like my phone now 😊

Yup, that's the idea with these Galaxy phones. You can customise it to whatever you want. Good to hear and enjoy!
