Thai style braised pork shoulder with in a rice cooker
1kg pork shoulder
2T fish sauce
4T brown sugar
Half a jar or tamarind sauce
1T ground coriander
Salt and pepper
Preparation
In a large bowl, Marinated pork all ingredients over night or two
Tip
Tamarind can be purchase from countdown
If you want sweet add more brown sugar, if you want sour then add more tamarind juice
Place pork into rice cooker then cover with cold water
Cook 40 minute then flip pork over other side and cook further 30 minute to tender meat as you liking then switch off the rice cooker
Rest for 10 minutes in the rice cooker and remove pork to rest on board
Slice pork and arrange onto deep dish with steamed vegetables and extra big bowl of rice or sticky rice to shared with big family
Bring juice that leftover inside rice cooker and thicken with corn flour
Pour over pork or just hot sauce without thicken
Served with extra hot chilli 🌶
