My watch is LTE but I have no idea what I need to organise to be able to make calls from my watch without my phone....any assistance would be awesome, cheers all.

Congrats on getting an awesome watch!
You'll need to get in touch with your network provider to enable Number Sharing. This essentially will activate the esim in the watch 7 and link it with your mobile number, thereby allowing you to receive/send calls, messages.
You'll have to contact your network provider. At the moment, only the major (optus, telstra and maybe Vodafone?) Can do this. So if you're with any one of the smaller ones, unfortunately you can't do Number Share. I think it's 5 bucks a month.

Just upgraded phones and supplier, better deal and a newer phone, compatible with my watch and already been shipped. Optus is my newest buddy lol

For the moment the optus, telstra , Vodafone offer this option for like 5 $ (i had to switch from boost to telstra because boost doesn't offer it yet)

Boost still work out the esim and a lot of provider dont look like they will release esim and portable number on wearable for their sub companies
