The update I got for my Tab S7+ from earlier this Feb was the One UI 3.1. I hope phones too will have its roll out sooner.

it probably depends on the phone. the S7+ is relatively new so I'm pretty sure it's on top of their list to get the update. 👍

Depending on your device. For Flagship phones updates are usaly monthly. For one's like A71 it's every three months. Samsung just announced 4 yrs of updates. 3.0 should be in the next 30 day's.
